ザッザッザッと金時豆を洗い、
大鍋に入れて黒糖でコトコト丹念に煮込む!
そう、沖縄のぜんざいは小豆でなく金時豆を使います。

何故か?

思い起こせば戦後、アメリカの物資がたくさん
沖縄に溢れていた頃…
カリフォルニアから来た金時豆でぜんざいを作ったのが
始まりのようです。
ぜんざいの定義は地域によって様々ですが、
沖縄では黒糖の味が染みた金時豆、緑豆、押し麦を
氷に添えた氷菓が定番です。


また、『ぜんざい』の名前の由来は、
初めて食べた一休さん(一休禅師)があまりの美味しさに
『善哉(よきかな)!』と、
言ったとか、言わなかったとか・・・

そして、琉宮の沖縄ぜんざいには、
一休さんも食べれなかった
紅芋、ウコン、プレーンの白玉ものせております。
地味だけど、滋味豊かな琉宮の沖縄ぜんざい。
